Marshmallow Chocolate Poke Cake

Directions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×13 inch cake pan by greasing it with butter and sprinkling a light dusting of flour, ensuring the cake releases smoothly once baked.

  2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt. Mix these dry ingredients thoroughly to ensure even distribution of flavors, which is key to a tremendous outcome.

  3. To the dry mixture, add the large eggs, whole milk, vegetable oil, and vanilla extract. With a hand mixer or whisk, mix the ingredients together until they are just combined. Do not overmix to maintain a light texture.

  4. Carefully stir in the boiling water; this step is crucial as it creates a smoother batter. The hot water activates the cocoa for a more delightful chocolate flavor.

  5. Pour the cake batter into the prepared pan and gently spread it evenly across the bottom.

  6. Place the cake pan in the preheated oven and bake for approximately 30-35 minutes. To check for doneness, insert a toothpick into the center; it should come out clean when the cake is ready.

  7. Once the cake is baked, remove it from the oven and allow it to cool for about 10-15 minutes. Use a fork to poke holes all over the top of the cake while it is still warm, letting those holes be the conduits for the delicious chocolate frosting.

  8. Take your chocolate frosting and pour it over the warm cake. Make sure the frosting seeps into the holes, saturating the cake with a tremendous amount of sweetness.

  9. Generously scatter mini marshmallows on top of the frosting, allowing them to soften slightly from the warmth of the cake.

  10. Finally, allow the entire cake to cool completely before serving. This will ensure that the flavors meld together beautifully, creating a dessert that truly impresses.
