Luscious Banana Pecan Cake

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. This step is critical; it ensures that your cake comes out intact and beautiful.

  2. In a large bowl, cream together the mashed bananas, granulated sugar, brown sugar, and butter until smooth. This mixture should be fluffy and light, offering a tremendous base for your cake.

  3. Beat in the eggs one at a time, making sure each one is fully incorporated before adding the next. Then stir in the vanilla, which adds a lovely aromatic edge to the batter.

  4. In a separate bowl, whisk together the flour, baking soda, and salt. This process aerates the flour for a lighter cake. Gradually add this dry mixture to the banana mixture, stirring until just combined—do not overmix!

  5. Fold in the chopped pecans gently. Their crunch will bring a fabulous texture contrast to the cake.

  6. Pour the batter into the prepared pan and smooth the top with a spatula, making sure it spreads evenly.

  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The edges should be a lovely golden brown and the smell, oh, it will be simply tremendous!
