Chewy Oatmeal Chocolate Chip Bars

Directions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish. This step is crucial as it ensures even cooking and helps prevent sticking.

  2. In a bowl, mix together the oats, flour, baking soda, and salt. Ensure that the dry ingredients are well combined; this makes for a tremendous blend of flavors throughout the bars.

  3. In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy. This process adds air, resulting in a tender texture.

  4. Beat in the eggs one at a time, followed by stirring in the vanilla extract. The addition of eggs adds moisture and richness to your bars.

  5. Gradually add the dry mixture to the wet mixture, mixing well after each addition. Be careful not to overmix; you want to maintain the comforting texture.

  6. Fold in the chocolate chips gently. Here, we invite the chocolate to join the party, ensuring even distribution throughout the mixture.

  7. Spread the mixture evenly into the prepared baking dish. Use a spatula to ensure that the batter is level.

  8. Bake for 25-30 minutes or until golden brown. The edges should be slightly crisp, while the center remains tender and chewy—a tremendous combination!

  9. Allow to cool for a few minutes before cutting into bars. This will help them set and make slicing much easier.
