Directions
-
Preheat the oven to 350°F (175°C). Grease and flour two round cake pans. This step ensures that the cake will release easily once baked.
-
In a mixing bowl, combine flour and sugar together. This mixture forms the dry ingredients for the base of your cake, providing structure and sweetness.
-
In another bowl, cream together the softened butter until light and fluffy. Gradually add the buttermilk, mixing well to ensure a smooth consistency. The buttermilk brings a tremendous moisture level to the cake.
-
Gently stir in the egg whites. The addition of egg whites creates a lighter texture that will make your cake fluffy. Now, combine the wet and dry ingredients, mixing until the batter is smooth and there are no lumps remaining.
-
Divide the batter evenly between the prepared pans. This ensures that both cake layers are identical in height, contributing to a beautiful presentation.
-
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. The cakes should also spring back when lightly pressed.
-
For the cheesecake center, blend the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy. This filling will add a luxurious texture to your cake.
-
Once the cakes are completely cool, place one layer on a serving platter. Spread the cheesecake mixture evenly over the top of this layer. Then, carefully place the second layer on top.
-
Frost the top and sides with your favorite frosting. Sprinkle generously with shredded coconut and chopped pecans for that perfect finishing touch.
