White Chocolate Blueberry Cheesecake

Ingredients

The Base

  • 200 g (about 2 cups) graham crackers or digestive biscuits, crushed
  • 100 g (1/2 cup) melted butter
  • 2 tbsp sugar (optional)

The Filling

  • 500 g (about 2 cups) cream cheese, softened
  • 150 g (3/4 cup) white chocolate, melted and slightly cooled
  • 100 g (1/2 cup) granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 100 ml (1/2 cup) sour cream or plain Greek yogurt
  • 150 g (1 cup) fresh or frozen blueberries (if frozen, do not thaw)

Topping (Optional)

  • 1 cup blueberries (for topping, optional)
  • 2 tbsp sugar (for topping, optional)
  • 1 tbsp lemon juice (for topping, optional)
  • 1 tsp cornstarch mixed with 2 tbsp water (for topping, optional)
