Prepare the Watermelon: Begin by cutting the watermelon into cubes. Make sure you remove any seeds if they are present. This refreshing fruit is filled with water, making it the perfect base for popsicles.

Blend the Ingredients: Add the watermelon cubes, fresh lime juice, and honey or maple syrup (if using) to a blender. Blend until completely smooth. The blending process creates a tremendously vibrant mixture that embodies the essence of summer.

Strain for Smoothness (Optional): For a smoother texture, strain the mixture through a fine mesh sieve to remove any excess pulp. This step is entirely optional, but it can enhance the mouthfeel of the popsicles.

Fill the Molds: Pour the mixture into popsicle molds, leaving a small space at the top to allow for expansion during freezing. This prevents any spills and ensures that your popsicles maintain a perfect shape.

Insert Sticks and Freeze: Insert popsicle sticks into the molds and freeze for 4–6 hours, or until fully solid. The waiting is often the hardest part, but the anticipation will be worth it.

Release the Popsicles: To release your watermelon popsicles, run warm water over the outside of the molds for a few seconds. This will help loosen the popsicles for easy removal. Gently pull them out when they’re ready.
