Valentine’s Day Rice Krispie Pops

Directions

  1. Start by taking a large saucepan and melt 6 tablespoons of butter over low heat. Keep stirring as it melts to ensure it does not burn. Once melted, add the 6 cups of mini marshmallows and stir continuously until completely melted and smooth. It’s important to achieve a tremendous consistency at this step.

  2. When your marshmallows are fully melted and well-combined, remove the saucepan from the heat. Stir in 1 teaspoon of vanilla extract to add some warm flavor to the mixture.

  3. Now, it’s time to add in the Rice Krispies. Carefully fold in 6 cups of Rice Krispies, mixing until everything is well combined. If you desire a pop of color for your treats, this is a perfect time to incorporate pink or red food coloring. Mix until the color is evenly distributed to achieve a tremendous look.

  4. Once combined, press the mixture into a greased 9×13 inch baking dish. Use a spatula or wax paper to help flatten the mixture evenly across the dish. Let it cool completely on your countertop.

  5. After they have fully cooled, cut the mixture into squares or fun shapes that can be easily placed on lollipop sticks. Make sure to insert the sticks firmly into the treats.

  6. Melt the 1 1/4 cups of white chocolate chips, 1 cup of pink candy melts, and 1/2 cup of dark chocolate chips separately. You can do this in the microwave by heating in short intervals, stirring regularly, or using a double boiler for even melting.

  7. Dip each Rice Krispie pop into the melted chocolate of your choice. Allow any excess chocolate to drip off before covering them with delightful sprinkles. You’ll see your pops transform into a truly beautiful treat!

  8. Lastly, place your decorated pops onto a parchment-lined tray and let them cool completely until the chocolate has hardened. This may take some time, but the wait will be worth it!
