Boil the Macaroni: Start by cooking the pasta. In a large pot, bring salted water to a boil. Add the elbow macaroni, and cook until al dente, generally about 8-10 minutes. Once done, drain and set aside.

Sauté the Seafood: Now, in a large skillet, combine the butter and olive oil over medium heat. As the butter melts, add the shrimp. Cook until the shrimp turns pink and is just cooked through, which should take approximately 2-3 minutes. Add the cooked lobster meat to the skillet for a minute or so just to warm it up. Once done, set the skillet aside.

Make the Cheese Sauce: Utilizing the same pot you used for the pasta, you’ll want to create a tremendous cheese sauce. Start by whisking flour into the melted butter over medium heat, forming a roux. Gradually whisk in the milk and heavy cream, stirring constantly until the mixture thickens, which usually takes about 5-7 minutes. Once it’s thickened, stir in the sharp cheddar, mozzarella, and parmesan until they melt and create a creamy sauce. Season this luxurious mixture with paprika, salt, and black pepper to taste.

Combine & Bake: Fold the cooked pasta and the sautéed seafood into the cheese sauce, combining thoroughly. Once mixed, pour this delectable concoction into a greased baking dish. For an added layer of deliciousness, top with any leftover cheese. Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes, or until the mac and cheese is bubbly and golden on top.

Serve & Garnish: Remove the baking dish from the oven and let it cool for a couple of minutes. Spoon the lobster and shrimp mac and cheese onto plates, sprinkle with fresh parsley for color and flavor, and serve it up with warm dinner rolls or brioche if desired.
