Directions

  1. Boil pasta. Begin by bringing a large pot of salted water to a rolling boil. Add the twisted pasta of your choice and cook until al dente, according to package directions. When ready, reserve ½ cup of the pasta water and then drain.

  2. Season & sear chicken. While the pasta cooks, pat the chicken dry with a paper towel. Season it generously with salt, pepper, and ½ teaspoon of Italian seasoning. In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add the seasoned chicken cubes and sear for approximately 3–4 minutes per side, or until they are golden brown and cooked through. Once done, transfer the chicken to a plate while retaining the juices in the skillet.

  3. Build garlic cream base. Lower the heat to medium and add the remaining 2 tablespoons of butter to the same skillet. Once melted, stir in the minced garlic and optional red pepper flakes. Cook for about 30–60 seconds, just until the garlic becomes fragrant and begins to soften.

  4. Deglaze & simmer. Pour in the chicken broth while using a wooden spoon to scrape up any browned bits stuck to the bottom of the skillet. Add the heavy cream and the remaining ½ teaspoon of Italian seasoning, then simmer gently for 2–3 minutes to allow the sauce to thicken slightly.

  5. Melt Parmesan. Reduce the skillet’s heat to low. Gradually sprinkle in the grated Parmesan cheese, stirring continuously until it’s fully melted and the sauce becomes velvety smooth. This is the moment where your dish will become truly sensational.

  6. Combine. Return the seared chicken along with any juices back to the skillet. Add the drained pasta and toss until each piece is evenly coated with the creamy sauce. If the sauce appears thick, you can stir in splashes of reserved pasta water until the sauce looks glossy and clings to the pasta beautifully.

  7. Finish & serve. Before serving, taste the dish and adjust the salt and pepper if necessary. Garnish with fresh chopped parsley for a pop of color and serve immediately, diving straight into this tremendous dish that’s sure to impress everyone at the table.
