Twice Baked Potato Casserole

Directions

  1. Preheat your oven to 400°F (200°C). The heat prepares an incredible environment for perfect potato baking.
  2. Bake the potatoes for about 1 hour, or until they are tender. This tremendous step is crucial for achieving that fluffy interior.
  3. Once baked, let the potatoes cool slightly. Cut them in half and scoop out the insides into a mixing bowl, leaving a thin layer of potato on the skin.
  4. Mash the potato flesh with sour cream, milk, and butter until the mixture is smooth and creamy. This step creates a base that is rich and inviting.
  5. Stir in the shredded cheese, chopped green onions, salt, and pepper. If you’re using bacon, fold it in here for a smoky flavor that enhances the overall dish.
  6. Pour the mixture into a greased baking dish and smooth it out evenly. This layer cradles all the delicious fillings!
  7. Sprinkle some additional cheese on top for a lovely, golden finish.
  8. Bake the casserole at 350°F (175°C) for 20-25 minutes or until everything is heated through and the cheese is bubbly. The aroma will fill your kitchen with warmth!
  9. Serve warm, and watch as everyone gathers around for this delightful treat.
