Directions

Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish to form an even crust. Bake the crust in the preheated oven for 10 minutes. Once done, remove it from the oven and let it cool while you prepare the filling.

  2. Make the First Layer (Classic Key Lime): In a medium bowl, whisk together the sweetened condensed milk, key lime juice, key lime zest, and egg yolks. Ensure these ingredients are well combined. Pour the mixture into the cooled crust, spreading it out evenly. Bake in the preheated oven for an additional 15 minutes. Remove from the oven and let it cool while you prepare the next layer.

  3. Make the Second Layer (Creamy Lime Cheesecake): In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add in the granulated sugar, egg, key lime juice, and vanilla extract. Beat until all ingredients are well blended. Gently spread this cheesecake mixture over the cooled first layer, offering a tremendous contrast in texture.
