This is not your average fried rice 👀

Directions

  1. Prepare your rice: Start by using day-old jasmine rice if possible. This will ensure a less sticky, more separated grain that is ideal for frying. If you don’t have day-old rice, spread freshly cooked rice on a baking sheet and let it cool completely.

  2. Heat the pan: In a large, non-stick skillet or wok, heat the vegetable oil over medium-high heat. The pan needs to be hot for a tremendous sauté that will enrich the flavors without steaming the ingredients.

  3. Sauté the aromatics: Once the oil is shimmering, add the minced garlic and chopped onions. Stir-fry for about 2 minutes until the onions are translucent and the garlic is fragrant. This step is tremendously important as it builds the flavor base for your fried rice.

  4. Scramble the eggs: Push the garlic and onions to the side of the skillet. Pour in the beaten eggs, allowing them to cook for about 1 minute until starting to set. Then, stir them gently into the onion mixture until fully cooked. This will add a tremendous creaminess to your dish.

  5. Add the protein and veggies: Toss in the cooked chicken (or your chosen protein) along with the frozen peas and carrots, and bell pepper if using. Stir everything together and heat through, about 3-4 minutes.

  6. Incorporate the rice: Add the cooked rice to the skillet, breaking up any clumps as you fold it in with the filling. Stir gently to combine everything, ensuring the residual heat warms the rice thoroughly.

  7. Add the sauces: Drizzle in the soy sauce and oyster sauce, followed by the sesame oil. Stir continuously for another 2-3 minutes until the rice has absorbed the flavors and is heated through. Adjust seasoning to taste with additional soy sauce if desired.

  8. Final touches: Gently fold in the chopped green onions. Give the fried rice a final stir and remove from heat. Let the mixture sit for a minute to allow the flavors to meld, giving you that tremendous taste with every bite.

  9. Garnish and serve: Serve hot, garnished with fresh cilantro or parsley for a pop of freshness. The textures of the crispy, soft, and tender components will create a delightful experience you won’t want to miss.
