The Best Blueberry Bread

Directions

  1. Prepare the Pan: Grease a large 1 1/2-pound loaf pan generously. You can also line it with parchment paper for added ease of removal. Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for the batter.

  2. Mix Dry Ingredients: In a large mixing bowl or mixer, combine the sugar, flour, baking powder, and salt. Whisk everything together thoroughly to ensure that the baking powder and salt are evenly distributed throughout the flour.

  3. Combine Wet Ingredients: In a separate bowl, whisk together the egg, milk, and vegetable oil. Make sure the wet ingredients are well mixed, as they will help create a moist texture in the final bread.

  4. Combine Mixtures: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are perfectly fine. This step is critical in ensuring a soft, tender bread.

  5. Add Blueberries: Fold in the blueberries gently. If you prefer, coat them in a little flour first to help prevent them from sinking to the bottom during baking.

  6. Pour Batter: Pour the batter into the prepared loaf pan. Make sure to fill it up to about 1 1/2 inches below the top to allow for the tremendous rise during baking.

  7. Optional Topping: If you wish, sprinkle a little sugar on top of the batter before baking. This will result in a lovely, sweet crust that contrasts beautifully with the soft interior.

  8. Bake: Bake for approximately 50-60 minutes, or until a toothpick inserted into the center comes out clean. This is a good time to enjoy the delicious aroma filling your home. Allow the bread to cool in the pan for 10-15 minutes before transferring it to a wire rack.

  9. Prepare Glaze: If you choose to add a glaze, mix the butter, powdered sugar, vanilla extract, and heavy cream together in a small bowl while the bread cools. Drizzle this glaze over the loaf once it has completely cooled, adding a final touch of sweetness before serving.

Serve and enjoy your tremendous blueberry bread while it’s still warm for the best bite!
