Tender Shredded Beef Stew with Roasted Green Chiles

Ingredients

The Filling

  • 2 1⁄2 lbs beef chuck roast
  • Salt and black pepper, to taste

The Base

  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups roasted green chiles, peeled and chopped (Hatch or Anaheim)

The Liquid

  • 3 cups beef broth
  • 1 cup water

The Spices

  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika

Optional Ingredients

  • 2 tablespoons flour (for thickening)
  • Fresh cilantro, chopped (for garnish)
