Sweet Rhubarb Custard Tart

Ingredients

The Filling

  • 2 cups rhubarb, trimmed and diced
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

The Base

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¾ cup unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water

For Garnish (Optional)

  • Fresh raspberries or strawberries
  • Whipped cream
  • Mint leaves
