Swedish Potatoes

Directions

  1. Preheat your oven to 350°F (175°C). Heating the oven first ensures the potatoes bake thoroughly and achieve that tremendous golden crust.
  2. Boil the potato chunks in salted water until tender, then drain. This step is crucial to create a fluffy base for the dish.
  3. In a mixing bowl, combine the sour cream, cream cheese, chopped onion, salt, and pepper. Whip the ingredients together until smooth; this mixture will encapsulate the potatoes in a tremendous creamy texture.
  4. Add the cooked potatoes to the mixture and gently fold to combine. Be careful not to over-stir—maintaining some potato chunks enhances the overall texture.
  5. Transfer the mixture to a greased baking dish. A well-prepared dish will help the potatoes develop a stunning top layer during baking.
  6. In a separate bowl, mix breadcrumbs with melted butter; then sprinkle this over the potato mixture. The buttery breadcrumbs will create a delightful contrast in texture, turning crispy as they bake.
  7. Bake for 25-30 minutes until golden and bubbly. Keep an eye on it—once golden, those aromas will be tremendous, inviting everyone to the table.
  8. Garnish with fresh chives before serving. This finishing touch adds a pop of color and a fresh note to balance the creamy dish.
