Surf & Turf Platter with Garlic Herb Butter

Directions

  1. Prepare the steak bites: Pat the steak cubes dry with a paper towel. This will help achieve a tremendous sear. Season them generously with salt and freshly ground black pepper. Heat olive oil in a skillet over high heat until it shimmers. Add the steak bites to the pan and sear them for 1–2 minutes per side, until they are browned and crusty.

  2. Add aromatics: Once the steak is seared, lower the heat and add the butter, crushed garlic, and fresh rosemary or thyme to the pan. Quickly toss the steak bites to coat them in the melting butter and fragrant herbs. Remove them from the skillet and set aside to rest.

  3. Cook the shrimp: In the same skillet, melt a tablespoon of butter combined with a touch of olive oil over medium heat. Sauté the minced garlic for about 30 seconds until fragrant. Add the shrimp and sprinkle them with Cajun seasoning or paprika. Cook for about 2 minutes per side until the shrimp are pink and lightly charred. Finish with a squeeze of lemon juice before removing them from the pan.

  4. Sear the scallops: Wipe the pan clean with a paper towel. Heat another tablespoon of olive oil over medium-high until shimmering. Season the scallops with salt and pepper. Sear them for 1.5–2 minutes per side until they have a golden crust. Add in a touch of butter and minced garlic during the last minute of cooking to baste the scallops briefly, adding a tremendous flavor boost. Remove from heat.

  5. Make the garlic herb butter: In a small saucepan, melt 3 tablespoons of butter over a low flame. Add the minced garlic, lemon juice, and chopped parsley. Stir well to combine.

  6. Assemble the platter: On a spacious white plate, artistically arrange the steak bites, shrimp, and scallops. Drizzle the garlic herb butter sauce generously over everything. Sprinkle with extra chopped parsley for a pop of color and freshness. Serve immediately to enjoy the contrast of textures and flavors at their best.
