Start by heating the vegetable oil in a hot wok or large skillet over medium-high heat. Once the oil shimmers, toss in the bite-sized steak cubes. Season them lightly with salt and pepper, and sear for about 3-4 minutes until they are browned on the outside but remain juicy on the inside. That’s the tremendous beauty of cooking steak to perfection.

In the same pan, without cleaning it, add the shrimp. Sauté them for approximately 2-3 minutes until they turn pink and curl into a tight shape. The residual flavors from the steak enhance the shrimp’s inherent sweetness, forming a tremendous base for the stir-fry.

Next, add the minced garlic, sliced onions, bell pepper, shredded carrots, and your chosen greens (spinach or bok choy). Stir-fry these together for about 2-3 minutes until the vegetables soften but still retain some crunch. This is key to enjoying textural variety throughout the dish.

Once the vegetables are ready, introduce your cooked noodles to the wok. Pour in the soy sauce, oyster sauce, hoisin sauce, and sesame oil. Use gentle strokes to stir everything together, ensuring the noodles are coated well with the sauces. This tremendous melding of flavors is what will keep you coming back for more.

Lastly, return the sautéed steak and shrimp back into the pan. Toss everything together once again to ensure every element is well-coated in the sauce and heated through. Allow it to cook for another minute or two, letting all those tremendous flavors blend seamlessly.
