- ½ cup brown sugar
- 2/3 cup flour
- 1/3 cup salted butter (melted)

Preheat your oven to 350°F (175°C). This is the perfect temperature to create a golden, crisp topping while ensuring your fruits bubble beautifully underneath.

In a large mixing bowl, combine your old-fashioned oats, ½ cup of brown sugar, flour, and cinnamon. Pour in the melted butter and mix everything just until the mixture becomes crumbly. The smell of the cinnamon will fill your kitchen with a tremendous warmth.

Grease a 9×9 baking pan, and spread half of the crumb mixture evenly over the bottom. This forms the base and sets the stage for the luscious fruits to shine.

Next, arrange the sliced peaches and strawberries on top of the crumb layer. What a stunning sight it is to see vibrant colors coming together!

In a small saucepan, mix the remaining ¼ cup brown sugar, cornstarch, salt, and water. Place this over medium-high heat. Cook while stirring constantly until thickened, which should only take a couple of minutes, so keep a close eye on it. The tremendous transformation of this mixture will create a syrup that enhances the fruit’s flavors.

Remove the saucepan from heat and stir in the vanilla extract. Then, pour this sweet syrup over your arranged fruit in the baking pan, allowing it to seep into all the nooks and crannies.

Now, sprinkle the remaining crumb mixture evenly over the top of the fruit and syrup. This step is crucial as it promises a beautifully crispy finish.

Bake in the preheated oven for about 35 minutes until the topping is golden brown and the fruit filling is bubbling around the edges.

(Optional) For an extra crispy topping, switch your oven to the broil setting, and place the pan on the top shelf. Broil for 2-3 minutes, carefully watching to prevent burning. You want just the right amount of caramelization.
