Strawberry Lemonade Buttermilk Cake

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan to ensure your cake releases easily once baked.

  2. Cream together the butter and sugar in a large bowl until the mixture is light and fluffy. This step is crucial, as it incorporates air into the batter, making the cake light and tender.

  3. Beat in the eggs, one at a time, ensuring each is fully mixed before adding the next. Then, stir in the buttermilk, fresh lemon juice, and lemon zest until well combined. The addition of these ingredients provides moisture and flavor, contributing to the cake’s overall depth.

  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Over-mixing can lead to a dense cake, so stop as soon as the flour disappears.

  5. Fold in the chopped strawberries gently, taking care not to crush them. This is where the tremendous burst of flavor comes from, as the berries weave throughout the batter.

  6. Pour the batter into the prepared baking pan and smooth the top with a spatula. Make sure it is evenly spread to ensure even baking.

  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Your kitchen will fill with the incredible aroma of baking strawberries and lemon, promising a delightful treat.

  8. While the cake is baking, prepare the lemon glaze by whisking together the powdered sugar and lemon juice until smooth. This glaze will add an extra layer of flavor and a beautiful finish to your cake.

  9. Once the cake is cool, drizzle the lemon glaze generously over the top, allowing it to seep into the cake for added moisture and taste.

  10. Slice and serve this beautiful creation. Enjoy the tremendous balance of flavors with family and friends, or savor a piece all by yourself.
