Strawberry Crunch Cheesecake Bites

Directions

  1. In a large bowl, beat the cream cheese and granulated sugar until smooth. This forms the creamy foundation of our cheesecake bites, creating a tremendous velvety texture.

  2. Add the sour cream to the mixture and mix until fully combined. The sour cream adds a perfect tanginess that balances the sweetness.

  3. Gently fold in the chopped strawberries. Take care not to overmix, as we want those tremendous pieces of strawberry to remain intact for added texture and flavor.

  4. In another bowl, combine the crushed graham crackers and melted butter until well mixed. This mixture brings a delightful crunch to each bite.

  5. Press half of the graham cracker mixture into the bottom of serving dishes. This forms a sturdy base for our cheesecake filling, creating an ideal structure.

  6. Spoon the cheesecake mixture over the crust. Ensure that it is evenly distributed for a uniform texture in every bite.

  7. Top with the remaining graham cracker mixture, lightly pressing it down to seal in the creamy filling. This will provide a beautiful crunchy topping.

  8. Chill in the refrigerator for at least 2 hours before serving. This step allows the flavors to meld beautifully and gives the cheesecake bites a chance to set.

  9. Optionally, garnish with additional strawberries and a dusting of powdered sugar before serving. This final touch not only enhances the look but also adds extra sweetness.
