Directions
-
Prepare the Strawberry Filling: Start by placing the fresh or frozen strawberries in a saucepan. Add the lemon juice and granulated sugar. Cook over medium heat, stirring occasionally, for about 10 minutes. This will break down the strawberries and reduce the mixture into a jam-like consistency. Once thickened, blend the mixture until smooth and refrigerate until cool.
-
Make the Dough: In a stand mixer bowl, combine the flour, sugar, salt, and yeast. Gradually add the warm milk, softened butter, and egg. Knead this mixture until smooth and elastic, around 5-7 minutes. Once done, let the dough rise, covered, for about 2 hours or until it has doubled in size.
-
Roll Out the Dough: After the dough has risen, turn it out onto a floured surface and roll it into a large rectangle. Evenly spread the cooled strawberry filling over the dough, carefully ensuring that every corner is covered. Roll the dough tightly into a log, then cut it into 12 equal strips.
-
Arrange the Rolls: Place the cut rolls in a greased baking dish, spacing them evenly. Cover with a clean kitchen towel and allow them to rise for an additional 30-60 minutes until they have puffed up nicely. While they rise, preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes until they turn a lovely golden brown.
-
Prepare the Glaze: In a mixing bowl, combine the softened cream cheese, butter, powdered sugar, vanilla extract, and strawberry puree. Blend until you have a smooth and creamy glaze that will beautifully coat your rolls.
-
Serve: Once the cinnamon rolls are out of the oven, spread the luscious glaze over them while they are still warm. The glaze will melt and seep into every crevice, creating a tremendous flavor experience. Serve immediately and enjoy each bite!
