Strawberry Cheesecake Red Velvet Cupcakes

Ingredients

The Base

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup vegetable oil or canola oil
  • 1 large egg, at room temperature
  • 1 tablespoon distilled white vinegar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup buttermilk, well shaken
  • 1-2 teaspoons red food coloring

The Filling

  • 4 oz (1/2 block) full-fat cream cheese, softened to room temperature
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • 1/4 cup finely chopped fresh or frozen strawberries

The Frosting

  • 8 oz (1 block) full-fat cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • Fresh strawberry halves (optional)
  • Edible gold sprinkles or red sanding sugar (optional)
