Strawberry Cheesecake Cookies

Directions

  1. Preheat your oven to 350°F (175°C). This step is crucial, as a well-preheated oven ensures even baking and the perfect texture for your cookies.

  2. In a bowl, whisk together 2 1/4 cups of all-purpose flour, 1/2 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Set this mixture aside for later.

  3. In a large bowl, beat together 1 cup of softened butter, 1 cup of softened cream cheese, 1 cup of sugar, and 1/2 cup of brown sugar until the mixture is smooth and creamy. This combination creates the rich base of the cookies.

  4. Add in 1 teaspoon of vanilla extract to enhance the flavor, and mix until fully incorporated.

  5. Gradually mix in the dry ingredients from step 2 until just combined. Be careful not to overmix—the dough should remain light.

  6. Fold in 1 cup of chopped fresh strawberries and, if you’re feeling indulgent, 1 cup of white chocolate chips. This adds a tremendous pop of color and sweetness to your cookies.

  7. Using a spoon, drop spoonfuls of dough onto a baking sheet lined with parchment paper, ensuring they are spaced out to allow for spreading.

  8. Bake for 10-12 minutes or until the edges are golden. The baking time can vary based on your oven, so keep an eye on these treasures.

  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. This step helps them firm up while still warm.
