Strawberry Cheesecake Bites

Directions

  1. In a bowl, combine the strawberry cake mix and cream cheese until smooth. Use a spoon or mixer to blend these two ingredients thoroughly. The result should be a mixed dough-like consistency that is a tremendous base for your bites.

  2. Roll the mixture into bite-sized balls, roughly one inch in diameter. Place each ball on a baking sheet lined with parchment paper. It’s tremendous fun to get your hands dirty while rolling these bites, as you can shape them to your desired size.

  3. Melt the pink candy wafer melts in a microwave-safe bowl. Start by heating them in 30-second intervals, stirring in between, to avoid overheating. The melts should be completely smooth and glossy when they are ready for dipping.

  4. Dip each ball into the melted candy, making sure it is evenly coated. Use a fork or toothpick to help you lift the balls out and let any excess candy drip back into the bowl. Place the coated bites back on the baking sheet.

  5. Melt the white almond bark in a separate bowl, using the same microwave method. Once melted, use a spoon or piping bag to drizzle the almond bark over the dipped bites for a beautiful decorative touch. This adds a tremendous element of elegance to each treat.

  6. Allow the bites to set completely at room temperature or in the refrigerator for about 30 minutes before serving. This step is crucial as it helps the coating to harden and provides a perfect bite when you enjoy them.
