Cake Batter:
Start by beating the unsalted butter and sugar in a mixing bowl until it’s fluffy and light. This step is crucial, as it incorporates air into the mix. Next, add in the eggs, one at a time, ensuring each is combined before adding the next. Then, add the vegetable oil, vanilla extract, and fresh strawberry puree, mixing well. In another bowl, combine the flour, baking powder, baking soda, and salt, then alternate adding this dry mixture and the milk to the wet mix. If you would like a more vibrant cake, this is the time to add pink or red food coloring. -
Baking:
Preheat your oven to 170°C (340°F). Grease and line three 20 cm cake pans. While it’s tempting to just pour all of the batter into one pan, dividing it into three pans ensures even baking and a tremendous rise on each layer. Once the batter is divided evenly among the pans, slide them into the oven and bake until a toothpick comes out clean—about 25 to 30 minutes. Once baked, cool the cakes in their pans for a few minutes before transferring them to a wire rack to cool completely. -
Strawberry Filling:
In a saucepan over medium-low heat, combine the chopped fresh strawberries, sugar, lemon juice, water, and cornstarch. Stir continuously until the mixture thickens, resembling a jam-like consistency. This process takes about 8 to 10 minutes. Once it reaches the desired thickness, let it cool completely before using it as a filling. -
Creamy Frosting:
In a chilled mixing bowl, whip the heavy cream until soft peaks start to form. Gradually add the powdered sugar and vanilla, continuing to whip until you achieve stiff peaks. If you desire a strawberry-flavored frosting, incorporate the strawberry puree or powdered strawberry into your whipped cream gently. -
Assemble:
It’s time to bring this tremendous cake to life! Begin by placing one cooled cake layer on a serving platter. Spread a generous layer of the creamy frosting over the top, then add a layer of the strawberry filling. Repeat this process with the second layer of cake. For the final layer, place it on top and cover the entire cake with the remaining whipped cream. Decorate with fresh strawberries on top for that extra touch of elegance.
