Strawberries and Cream Dream Layer Cheesecake Cake

Directions

  1. Preheat your oven to 350°F (175°C). Begin by crushing the graham crackers into fine crumbs. You can do this by placing them in a plastic zip-top bag and rolling over them with a rolling pin or pulsing them in a food processor. In a mixing bowl, combine the crushed graham crackers with the melted butter, ensuring everything is evenly mixed. Press this mixture firmly into the bottom of a springform pan. Bake for 10 minutes, then set aside to cool. This crust will provide a tremendous foundation for your cheesecake.

  2. In another mixing bowl, beat together the softened cream cheese, granulated sugar, and lemon juice until the mixture is smooth and creamy. The key here is to ensure that there are no lumps, as this will lead to a delightful creamy texture in your final cake.

  3. In a different bowl, whip the heavy cream until soft peaks form, then gradually add in the powdered sugar. Whipping until stiff peaks form will give your cheesecake filling a luscious, airy quality. Once done, gently fold the whipped cream into the cream cheese mixture, being careful not to deflate it. This step is crucial for achieving the tremendous lightness that will balance with your crust.

  4. Now it’s time to assemble your cake! Layer half of the cheesecake mixture over the cooled crust, spreading it evenly. Next, add a generous layer of the sliced strawberries on top of the cheesecake. Repeat with the remaining cheesecake mixture and finish with another layer of strawberries. This beautiful layering not only enhances flavor but also adds an attractive presentation.

  5. Chill the assembled cheesecake in the refrigerator for at least 4 hours, or until it is set. The chilling process allows all the flavors to meld together beautifully. When ready to serve, slice into this magnificent cake and enjoy it chilled. Each slice is a tremendous tribute to the classic balance of strawberries and cream.
