Southwestern Green Chile Beef & Potato Stew

Ingredients

The Filling

  • 2 lbs beef chuck, cut into bite-size chunks
  • Salt and black pepper to taste
  • 2 tbsp oil

The Base

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups diced potatoes (russet or Yukon gold)
  • 1 1/2 cups roasted green chiles, chopped (Hatch or Anaheim)
  • 1 tsp ground cumin
  • 1/2 tsp oregano
  • 1/2 tsp smoked paprika

The Liquid

  • 4 cups beef broth
  • 1 cup water

Optional Elements

  • 1 tbsp flour (optional, for thickening)
  • Chopped fresh cilantro (optional, for garnish)
