- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan to ensure your cake slides out easily when it’s ready.
- In a large mixing bowl, combine the white cake mix, crushed pineapple (including all the juice), vegetable oil, eggs, and vanilla extract. Mix together until everything is well incorporated and smooth. The tremendous aroma of the mixture will be inviting!
- Gently fold in the chopped pecans, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared baking pan and smooth the top with a spatula for an even bake.
- Bake the cake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Your kitchen will be filled with a tremendous scent as it bakes.
- Once baked, allow the cake to cool in the pan for about 10 minutes. Afterward, carefully transfer it to a wire rack to cool completely.
- For the frosting, in a separate bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once the cake is fully cool, generously spread the cream cheese frosting over the top, creating an enticing layer of sweetness.
