Smothered Pork Chops with Potatoes

Directions

  1. In a large skillet, heat some oil over medium-high heat. You want the oil to shimmer, creating a tremendous surface for searing.

  2. Season the pork chops with salt and pepper, then add them to the skillet. Cook until browned on both sides, which should take about 4-5 minutes per side. This step is crucial as it creates a wonderful crust that locks in the juices.

  3. Remove the pork chops from the skillet and set them aside. Letting them rest allows the meat fibers to relax, keeping your chops tender.

  4. In the same skillet, add the sliced onion. Cook until softened, stirring occasionally. The goal here is to release the onion’s natural sweetness, enhancing the dish’s overall flavor.

  5. Add the sliced potatoes and chicken broth into the skillet, stirring to combine all the ingredients. The broth will infuse the potatoes with tremendous flavor as they cook.

  6. Return the pork chops to the skillet and bring to a simmer, ensuring that everything is well incorporated.

  7. Cover the skillet and cook until the potatoes are tender and the pork is cooked through, which should take about 20-25 minutes. This slow-cooking method allows the flavors to meld perfectly.

  8. If you are using heavy cream, stir it in just before serving. This adds an incredible richness that elevates the dish even further.

  9. Serve hot and enjoy the harmonious blend of flavors.
