Smoky Jalapeño Popper Meatloaf

Directions

  1. Preheat your oven to 350°F (175°C). This ensures even cooking, setting the stage for a tremendous meal.

  2. In a large bowl, combine the ground beef, breadcrumbs, cream cheese, jalapeños, cheddar cheese, onion, egg, garlic powder, salt, and pepper. Mix until just combined. Avoid overmixing, as you want to keep the meatloaf tender and juicy.

  3. Shape the meat mixture into a loaf and place it in a baking dish. Make sure to mold it evenly so that it cooks uniformly, ensuring each bite is a tremendous treat.

  4. Wrap the bacon slices around the meatloaf, tucking the ends underneath. The bacon not only adds flavor, but it also keeps the meat moist during cooking.

  5. If desired, brush the top with barbecue sauce. This adds an extra layer of flavor that enhances the overall dish.

  6. Bake for 1 hour, or until the internal temperature reaches 160°F (70°C). Use a meat thermometer for accuracy to ensure a perfectly cooked meatloaf.

  7. Let it rest for 10 minutes before slicing and serving. This resting period allows the juices to redistribute, making each slice tremendous in flavor and texture.
