Smoked Jalapeño Popper Chicken Bombs

Directions

  1. Preheat the smoker to 225°F (107°C). This step is vital as it prepares the lovely smokiness that will infuse the chicken bombs with flavor. Make sure you use good quality wood chips for that rich smokey profile.

  2. In a bowl, mix the hot Italian sausage, cream cheese, cheddar cheese, and chopped jalapeños until well combined. The tremendous blend of these ingredients creates a deliciously spicy filling. Use a fork to make sure everything is evenly mixed, allowing the flavors to meld together.

  3. Take a chicken breast, place a spoonful of the filling in the center, and fold or roll the chicken around the filling. This step is essential; ensure the filling is properly encased to prevent it from spilling out during cooking.

  4. Season the outside of the chicken with salt and pepper. This adds a tremendous layer of flavor to the dish. If using bacon, now is the time to wrap each chicken bomb, ensuring you cover as much surface area as possible for that crispy goodness.

  5. Place the chicken bombs on the smoker and cook for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). The cooking time may vary based on the size of the chicken breasts, so keep an eye on them. The wonderful smell that’s filling the air will be your guide to how good they’re getting.

  6. Drizzle with BBQ sauce if desired and serve hot. The sweet and tangy flavor of BBQ sauce perfectly complements the spicy goodness of the popper filling, making every bite a flavor explosion.
