Slow Cooker Chicken Gnocchi Soup

Directions

  1. In a slow cooker, combine the chicken breast, diced carrots, diced celery, diced onion, and minced garlic. Add the chicken broth, dried thyme, dried basil, and season with salt and pepper. Mix well to ensure that the chicken is covered with the broth and spices.

  2. Cook the mixture on low for 6-8 hours or on high for 4 hours. The cooking times may vary slightly based on your slow cooker’s settings, but you’ll know it’s ready when the chicken is tender and easily shreds with a fork.

  3. About 30 minutes before serving, carefully shred the chicken directly in the slow cooker using two forks. Stir in the gnocchi and spinach, allowing them to heat through and soften. The incredible textures of the gnocchi will meld beautifully with both the chicken and the fresh spinach.
