Place the chicken thighs or breasts in the slow cooker. Ensure they are spread out evenly to allow for good cooking.

Add the bell pepper, onion, garlic, diced tomatoes, chicken broth, olives, Italian seasoning, salt, and pepper on top of the chicken. Each ingredient brings its own taste, leading to a tremendous flavor building experience.
