Slow Cooker Chicken Cacciatore

Directions

  1. Place the chicken thighs or breasts in the slow cooker. Ensure they are spread out evenly to allow for good cooking.

  2. Add the bell pepper, onion, garlic, diced tomatoes, chicken broth, olives, Italian seasoning, salt, and pepper on top of the chicken. Each ingredient brings its own taste, leading to a tremendous flavor building experience.

  3. Stir gently to combine. Be careful not to disturb the chicken too much; it will cook beautifully with the vegetables.

  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender. You can make this in the morning and come home to a delightful aroma.

  5. Once done, shred the chicken if desired and stir everything together. This adds extra flavor to the sauce and makes serving easier.
