In a skillet over medium heat, cook the chopped bacon until crispy. This step is tremendously important as it helps render the fat, adding flavor to both the bacon and the chicken. Once crispy, remove the bacon and set aside, making sure to leave the fat in the skillet.

In the same skillet, sear the chicken thighs. Cook them for about 4-5 minutes on each side until they are beautifully browned. This initial browning step not only locks in moisture but also creates a wonderful flavor base for your dish.

While the chicken is sizzling, mix together the tremendous sauce in a bowl. Combine the brown sugar, soy sauce, minced garlic, apple cider vinegar, black pepper, and red pepper flakes (if using). Stir until well combined.

Place the seared chicken in the slow cooker. Pour the previously prepared sauce over the top, ensuring that each piece of chicken is coated in that incredible mixture.

Sprinkle the cooked bacon on top of the chicken in the slow cooker. The crispy bits will meld beautifully into the dish, providing a savory kick with each bite.

Cover and cook on low for 4-6 hours. The chicken should become tender and fully cooked through. The waiting time allows the flavors to develop fully and the chicken to absorb the glaze’s sweetness.

Before serving, garnish your dish with chopped green onions. Their freshness balances the richness of the chicken and bacon, adding an inviting pop of color.
