The Filling

The Base
- 2 cups cooked rice or quinoa
- 1 can (15 oz) diced tomatoes
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley, chopped (for garnish)
The Topping
- 1 cup sour cream or Greek yogurt
- Additional shredded cheese for sprinkling
- Sliced green onions or chives for garnish
