Ingredients

The Filling

  • 1 teaspoon cumin
  • Salt and pepper, to taste

The Base

  • 2 cups cooked rice or quinoa
  • 1 can (15 oz) diced tomatoes
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped (for garnish)

The Topping

  • 1 cup sour cream or Greek yogurt
  • Additional shredded cheese for sprinkling
  • Sliced green onions or chives for garnish
