Seared Shrimp Stuffed Avocados

Directions

  1. To kick things off, gather your ingredients and prepare the salsa. In a bowl, mix the diced tomatoes, chopped red onion, cilantro, olive oil, lemon juice, and a pinch of salt. Allow these tremendous flavors to blend, setting the salsa aside for later.

  2. Next, it’s time to focus on our star ingredient: the shrimp. Pat the shrimp dry with a paper towel to maintain their texture. In a bowl, toss the shrimp with paprika, garlic powder, salt, pepper, and the lemon juice. This will create a tremendous seasoning that will elevate the dish.

  3. Heat a skillet over medium-high heat. Add olive oil or butter and let it get hot. Once sizzling, place the shrimp in the skillet. Sear each shrimp for about 1.5 minutes on one side, then flip and cook for another 1.5 minutes until they are perfectly golden and cooked through. Remove them from heat and get ready to assemble.

  4. With the shrimp cooked perfectly, let’s prepare the avocados. Gently scoop out a little flesh from each avocado half. This creates additional space for the shrimp and salsa, making for a tremendous presentation.

  5. Now for the fun part! Place the avocado halves on a serving plate. Fill each half with 2–3 shrimp, making sure to distribute them evenly. Top each avocado with a generous spoonful of your fresh tomato salsa.

  6. For those wanting an extra punch of flavor, melt some butter and mix it with minced garlic and chili flakes. Drizzle this heavenly mixture over the stuffed avocados and shrimp for a finishing touch that will leave your taste buds in a state of bliss.
