Begin by heating a large pot over medium heat. Add the mild Italian sausage, cooking it until it turns a beautiful golden brown. This cooking step allows the sausage to release its tremendous flavors, which will form the base of your soup.

Next, add the chopped yellow onion and minced garlic to the pot. Sauté them together until the onion becomes translucent, which should take about 4-5 minutes. The smell of the onion and garlic will be tremendous, creating an inviting atmosphere in your kitchen.

Stir in the chopped cabbage next. Cook the cabbage until it becomes slightly wilted, about 4-6 minutes. The cabbage will soften while still maintaining a little bite, adding contrast to the dish’s texture.

Once the cabbage is ready, it’s time to add the diced tomatoes along with their juices, one can of water, the dried basil, oregano, rosemary, bay leaf, salt, pepper, and brown sugar. This combination enhances the soup’s depth, bringing a tremendous mix of flavors to every bite.

Bring the mixture to a boil, watching as it bubbles amusingly. Once boiling, reduce the heat to low and allow the soup to simmer. Cover partially and let it cook for about 30 minutes, stirring occasionally. This simmering process allows the flavors to meld beautifully, enhancing the overall taste of your soup.

After the 30 minutes are up, lift out the bay leaf, as its job is now done. The soup is now ready to be served, with all the tremendous flavors waiting to be enjoyed.
