Rhubarb Crisp

Directions

  1. Preheat the oven to 350°F (175°C). This initial step is essential, as it prepares your kitchen for the tremendous aroma that will soon fill it. Ensure your oven is completely heated before placing your dish inside.

  2. In a bowl, combine the rhubarb, sugar, cornstarch, and lemon juice. Stir until the rhubarb is well-coated, which helps to create a perfect balance of flavors. This mixture will be the sweet, tangy base of your crisp. Once mixed well, pour it into a greased baking dish. Spread it evenly to ensure all parts will cook properly.

  3. In another bowl, mix the oats, flour, brown sugar, melted butter, and cinnamon until crumbly. This is where the tremendous crunch comes from. Combine everything thoroughly so that the butter incorporates well, giving you that satisfying texture on top.

  4. Sprinkle the oat mixture over the rhubarb filling. Be generous, allowing the crumbly topping to cover the fruit completely. This creates a delightful contrast when it bakes—tangy fruit and sweet, crunchy topping harmoniously blend together.

  5. Bake for 45 minutes or until the top is golden brown and the rhubarb is bubbly. Keep an eye on the color; the crisp should look inviting and delicious when it’s ready. Your kitchen will fill with aromas that will make your mouth water in anticipation.

  6. Let cool slightly before serving. Allowing it to rest will make serving easier and provide a better consistency. Enjoy your tremendous creation with a scoop of vanilla ice cream or a dollop of whipped cream for an added treat!
