Refreshing Lemon Raspberry Cheesecake

Ingredients

The Base

  • 250 g oatmeal or plain cookies
  • 100 g melted butter
  • 1 tablespoon sugar (optional)

The Filling

  • 400 g cream cheese (at room temperature)
  • 300 g cream cheese (Philadelphia style)
  • 200 ml cream (cold)
  • 1 cup powdered sugar
  • Zest of 1 lemon
  • 1/3 cup lemon juice
  • 1 packet vanilla extract
  • 10 g powdered gelatin
  • 3 tablespoons water (to dissolve the gelatin)

The Raspberry Sauce

  • 250 g raspberries (fresh or frozen)
  • 3 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water (for consistency)
