Ingredients
The Base
- 250 g oatmeal or plain cookies
- 100 g melted butter
- 1 tablespoon sugar (optional)
The Filling
- 400 g cream cheese (at room temperature)
- 300 g cream cheese (Philadelphia style)
- 200 ml cream (cold)
- 1 cup powdered sugar
- Zest of 1 lemon
- 1/3 cup lemon juice
- 1 packet vanilla extract
- 10 g powdered gelatin
- 3 tablespoons water (to dissolve the gelatin)
The Raspberry Sauce
- 250 g raspberries (fresh or frozen)
- 3 tablespoons sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon water (for consistency)
