Make the Red Velvet Cake: Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper. In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt. This mixture will provide a tremendous base for our cake layers.
In a separate bowl, whisk together the egg, vegetable oil, buttermilk, red gel food coloring, vanilla extract, and vinegar. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix, as you want to keep that tender texture. Divide the batter evenly between the prepared pans and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Allow the cakes to cool completely before removing them from the pans.

Make the Cheesecake Layer: Lower the oven temperature to 325°F (163°C). In a large bowl, beat the cream cheese and sugar until it reaches a smooth and creamy texture. This will be the heart of your cheesecake, so take your time. Add the eggs, one at a time, mixing well after each addition. Then, incorporate the sour cream and vanilla extract.
Pour the cheesecake batter into a greased and parchment-lined 8-inch springform pan. Bake for 40-50 minutes, or until the edges are set but the center is slightly jiggly. Allow the cheesecake to cool to room temperature, then chill in the refrigerator for at least 4 hours or preferably overnight. The chilling process is essential for achieving that tremendous creaminess.

Make the Strawberry Glaze: In a small saucepan, combine the chopped strawberries and sugar. Cook over medium heat until the strawberries start to release their juices, creating a wonderful aroma. In a small bowl, mingle the cornstarch and water until smooth, forming a slurry. Stir this mixture into the strawberries and cook until the glaze thickens, then let it cool completely.

Assemble the Cake: On a serving plate, place one red velvet cake layer. If desired, spread a thin layer of whipped cream or cream cheese frosting atop it for added richness. Carefully position the chilled cheesecake layer on top. Add the second red velvet cake layer on top of the cheesecake, ensuring it’s balanced and beautiful. Finally, spread the cooled strawberry glaze over the top. This glaze not only adds flavor but also a tremendous vibrant color that will catch anyone’s eye.
