Directions

  1. Preheat the oven to 350°F (180°C). Line a rectangular baking sheet (approximately 10×15 inches) with parchment paper. This step ensures a seamless release of the cake, allowing it to maintain its spectacular form.

  2. In a large mixing bowl, beat the eggs and sugar until light in color and fluffy, about 4–5 minutes. The tremendous volume achieved at this stage is crucial for a cake that rolls beautifully.

  3. Add the oil, vanilla extract, and red food coloring to the egg mixture and mix briefly until just combined, bringing that iconic color to life.

  7. While the cake is still warm, roll it up gently with the towel. Let it cool in this rolled form; this will help the cake maintain its shape when filled later.

  8. In a mixing bowl, beat the cream cheese and butter until smooth. Then add the powdered sugar and vanilla extract, mixing until creamy. This cream cheese filling is what makes this cake absolutely divine.

  9. Once the cake has cooled, carefully unroll the cake and spread the cream evenly over the surface. Make sure to cover every corner to ensure a creamy bite in every slice.

  10. Roll it up tightly again. Wrap the rolled cake in plastic wrap and let it rest in the refrigerator for at least 1 hour. This wait helps the cake to set and flavors to meld perfectly.
