Red Menudo (Traditional Mexican Hominy & Tripe Soup)

Ingredients

The Filling

  • 2 1/2 lbs beef tripe, cleaned and cut into bite-size pieces
  • 1 lb beef feet or beef shank (optional, for richness)

The Base

  • 2 cans (25 oz each) white hominy, drained and rinsed
  • 1/2 large onion
  • 6 cloves garlic

The Chiles

  • 4 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 1–2 dried chile de árbol (optional, for heat)

The Seasoning

  • 1 teaspoon ground oregano (Mexican oregano preferred)
  • 1 teaspoon ground cumin
  • Salt, to taste
  • Water
