Ingredients
The Filling
- 2 1/2 lbs beef tripe, cleaned and cut into bite-size pieces
- 1 lb beef feet or beef shank (optional, for richness)
The Base
- 2 cans (25 oz each) white hominy, drained and rinsed
- 1/2 large onion
- 6 cloves garlic
The Chiles
- 4 dried guajillo chiles, stemmed and seeded
- 2 dried ancho chiles, stemmed and seeded
- 1–2 dried chile de árbol (optional, for heat)
The Seasoning
- 1 teaspoon ground oregano (Mexican oregano preferred)
- 1 teaspoon ground cumin
- Salt, to taste
- Water
