Raspberry Ice Cream Cheesecake

Ingredients

The Base

  • 2 cups graham cracker crumbs (or processed biscuits)
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter

The Filling

  • 2 cups fresh or frozen raspberries
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 450 g cream cheese (room temperature)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 cups vanilla ice cream (slightly softened at room temperature)
  • 1 cup whipped cream
