Raspberry Chia Pudding Sweetened with Maple Syrup

Directions

  1. Mix the Ingredients: In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Whisk quickly until everything is well mixed. It’s important to dissolve the chia seeds without clumps; this will make for a smoother texture.

  2. Mash the Raspberries: Take your fresh or frozen raspberries and place them in a separate bowl. With a fork or a potato masher, gently crush the raspberries. This will release their natural juices and create a beautiful mash. Tremendous flavor and aroma will fill the air as you do this!

  3. Combine Everything: Once your chia mixture is prepared, fold in your mashed raspberries. Stir gently to integrate the raspberry goodness throughout the pudding.

  4. Let It Set: Cover your mixing bowl with a lid or plastic wrap and place it in the refrigerator. Allow it to set for at least 4 hours, although overnight is best. The chia seeds will swell, absorbing the liquid and creating that delightful, pudding-like consistency.

  5. Serve and Enjoy: Once set, give the pudding a good stir. Serve it in bowls or jars, topped with a sprinkle of sliced almonds, shredded coconut, and more fresh raspberries. Drizzle with extra maple syrup if you wish. Every bite is destined to be tremendous!
