Pumpkin Spice Gooey Cake

Directions

  1. Prepare the Cake Base:
Preheat your oven to 350°F (175°C). In a mixing bowl, add the yellow cake mix, melted butter, and the egg. Mix these ingredients until they are well blended. Then, press the mixture evenly into the bottom of a greased 9×13-inch baking dish.

  2. Make the Pumpkin Filling:
In a separate bowl, whisk together the canned pumpkin puree, ground cinnamon, ground nutmeg, and ground ginger until the mixture is smooth. Pour this fragrant pumpkin mixture over the cake base, spreading it evenly across the surface.

  3. Prepare the Cream Cheese Topping:
In another mixing bowl, beat the softened cream cheese until it becomes creamy and smooth. Gradually add the powdered sugar while mixing, ensuring everything combines. Stir in the milk and vanilla extract until the mixture achieves a silky consistency. Dollop this creamy topping over the pumpkin layer and use a spatula to gently swirl it in, creating a beautiful marbled effect.

  4. Bake the Cake:
Place the baking dish in the preheated oven. Bake for 45-50 minutes, or until the edges are set and the center remains slightly gooey. This is key to achieving that wonderful texture. Once baked, allow the cake to cool in the pan for at least 30 minutes before serving.

  5. Serve:
Cut the cake into squares and, if desired, finish with a dollop of whipped cream for an added touch of sweetness. Each piece is a delightful celebration of autumn flavors, perfect for gathering around the table.
