Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners. This will ensure your muffins come out easily and maintain a beautiful shape.

In a large bowl, mix together the rolled oats, baking powder, pumpkin pie spice, and salt. This blend creates a tremendous base, infusing flavor and structure into your muffins.

In another bowl, combine the pumpkin puree, maple syrup, milk, eggs, and vanilla extract until well mixed. It’s important to blend these wet ingredients thoroughly to achieve a tremendous flavor throughout each muffin.

Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; you want the texture to remain light and fluffy.

Spoon the mixture into the muffin tin, filling each cup about 2/3 full. This will give the muffins room to rise while baking without overflowing.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. The aroma of baking muffins will fill your kitchen with a tremendous warmth.
