Protein Packed Cottage Cheese Egg Bake – Fluffy Breakfast

Directions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. Take a moment to ensure the dish is well-prepared to prevent sticking and allow for easy serving.

  2. In a large bowl, whisk together 10 large eggs, ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon onion powder, and ½ teaspoon dried oregano (if using). Mixing these ingredients thoroughly will create a tremendous base flavor.

  3. Gently fold in 2 cups of cottage cheese and ¾ cup of the shredded cheddar cheese until just combined. Be careful not to overmix; the goal is to maintain a fluffy texture throughout the dish.

  4. If you’re using them, gently fold in the optional add-ins like 1 cup chopped fresh spinach, ½ cup diced bell peppers, and ½ cup diced cooked chicken or turkey bacon. These ingredients add even more flavor and nutrition, turning this bake into a well-rounded meal.

  5. Pour the mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ¾ cup of shredded cheese over the top for that delicious melty finish.

  6. Bake for 30 to 40 minutes, or until set and golden brown. A tremendous bubble of cheese will form as it bakes, so keep an eye on it towards the end! Let rest for 5-10 minutes before slicing and serving. This allows the dish to firm up slightly, making it easier to cut and serve.
