Potsticker Noodle Bowl

Directions

  1. Begin by cooking the wide Lo Mein noodles according to the package instructions. Once tender, rinse them under cold water and set aside. This step keeps them from getting sticky and ensures they have a tremendous bite when combined with the other ingredients.

  2. In a large skillet, heat the peanut oil over medium-high heat. Add the ground pork and cook, breaking it apart with a spatula. Stir in 1/4 cup of green onions and allow the mixture to brown for about 5–7 minutes, until the pork is fully cooked and the onions become fragrant.

  3. While the pork is cooking, whisk together the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha in a small bowl. This sauce will add tremendous depth to your noodle bowl.

  4. Once the pork is browned, pour the sauce mixture into the skillet. Stir well to combine, allowing the flavors to meld for 2–3 minutes.

  5. Next, add the cooked Lo Mein noodles and coleslaw mix to the skillet. Toss everything together, making sure the noodles are well-coated with the sauce. Cook for another 2–3 minutes, or until the coleslaw mix starts to wilt and everything is heated through.

  6. Remove the skillet from heat, and garnish the dish with the remaining sliced green onions. Serve hot and enjoy this delightful Potsticker Noodle Bowl.
