Popeyes Red Beans and Rice

Directions

  1. Rinse and soak the red beans overnight. This step is vital as it helps soften the beans, making them easier to cook. A good soak will enhance the tremendous flavor and texture.

  2. In a large pot, combine the soaked beans and water. Next, add in the chopped onion, bell pepper, celery, minced garlic, Cajun seasoning, bay leaf, salt, and pepper. All these ingredients together create a tremendous aroma that fills your kitchen, making it hard to resist a taste before it cooks.

  3. Bring the pot to a boil over medium heat. Once boiling, reduce the heat and let it simmer. Cook for about 1.5 to 2 hours until the beans are tender. Stir occasionally so that nothing sticks to the bottom of the pot.

  4. When the beans are cooked perfectly, remove the bay leaf. If you desire a creamier texture, mash some of the beans with a fork or a potato masher. This adds a lovely richness and enhances the overall experience.
